FLATBREAD • PAIA, MAUI
It’s Pizza all right!  From their garden fresh herbs to organic stone-ground flour, Flatbread Company makes the finest pizza pie this side of the Rockies. And oh, yes, they make pizza on the other side of the Rockies too -- in Vermont, where this whole thing got started.
We are just lucky they decided to drop in on us and open The Flatbread Company in one of the oldest restaurant spots in Paia.  They took the old place and made her into a full fire-driving kitchen: they use no electricity at all to make their foods -- be it the sausage from scratch or the pizzas (cranked out every five minutes) in their 800-degree kiawe oven!
 
It was exciting to dine at Flatbread.  Even more so because by the time you read this 6th edition of the Guardian, they will have hosted us, in their magnanimous community-minded way, for the premier of our 2007-’08 edition.
 
Paul Dexter, GM extraordinaire was bubbling over with the gleeful, playful enthusiasm as he delivered more pizza and more salad, and more pizza and more salad -- and his choices of good wine -- throughout our evening.  Each pizza has a story, for cryin’ out loud. 
EVERYTHING has a story here.  The dessert is even made by someone by the name of Barbara in Vermont who airfreights the Brownies to Maui where they get heated up and served with our Roselani ice-cream and a frikkin’ RICH chocolate sauce and oh, yes, whipped cream on top with none other than Vermont maple syrup as the sweetener.
 
But if you want something less decadent (or is it?) you can have a Waialua Mango Float for dessert.  Need I say more about dessert?

So let’s get back to the pizzas.  We had a homemade sausage pizza, a “punctuated Equilibrium (yep, they named it that), a veggie special (they have specials every night), one with Kalua pig, and one more with nitrate-free pepperoni and mushrooms.  I honestly can’t tell you which one I liked best, or which ones my dinner pals liked best?  They are all good.  Just plain good!  I guess so -- we ate four of them!
 
Salads were hearty amounts of fresh organic greens with several choices of cheese, chemical-free meats, and veggies to choose from.  It’s a fun menu.
 
The dough for the pizzas is made fresh daily with 100% organic wheat that is milled and then has the wheat germ put back into it.  Of course the salt is kosher and the water is purified!
 
They have a great little wine list and every one of the beers on tap is a Hawaiian microbrew. 
 
And about the only other thing I have to say is, I LOVE IT THERE.  Had my family birthday party there this year.  The vibe is upbeat, exceeding friendly, totally current, and, well, organic, “As organic as we can get!”

The Flatbread Company holds weekly events for non-profit organizations and gives a healthy portion of every pizza sold that evening to that non-profit group.
